The chef seeks out exotic flavors and combines them with local dishes. Does not shy away from a bit of spectacle, creating animation by for example, walking through the restaurant with huacatay so that even the smell can be absorbed. Lootens uses this 'Peruvian mint' in a sauce to accompany mullet. It is accompanied by a sour touch of kalamansi in the mousseline that nicely balances the sweetness of the pumpkin.
